Updated version of the Guidelines for meat and meat products
In mid-June of this year, the revised version of the Guidelines for Meat and Meat Products was published on the homepage of the Federal Ministry of Food and Agriculture (BMEL).
For example, the regulation on the emphasising reference "top quality" (2.12) has been revised. Beer hams (2.224.1) and minced meat (2.507.3) were previously excluded from this scheme. With the new version, the proportion of BEFFE (meat protein free of connective tissue protein) must be increased for these products in the "top quality" label.
The new version of the Guidelines also revised the rules on gelatine for human consumption (1.315) and on the description of meat and meat products (2.1), clarified the concept of 'meat-like substance' (footnote 30) and introduced amendments concerning beer balls, corned beef with jelly, beef jelly, ham, cutlet and steak.
