Sampling plan for environmental investigations on Listeria monocytogenes / Listeria spp. for craft businesses (butcheries)

The guideline on preventive measures against Listeria monocytogenes by the German Food Association outlines a specific sampling plan for environmental monitoring for small businesses (artisanal butcheries) in Chapter 7.2.1, Table 4. These recommendations include data on the number of samples to be tested annually with examples of sampling sites. This example will play a significant role in implementing environmental monitoring for Listeria monocytogenes in artisanal butcheries.

Analogous to the recommendations for artisanal butcheries, Table 5 of this chapter provides an example of a sampling plan for environmental and smear water tests for Listeria monitoring in artisanal dairies.
