Tomato sauce in Ökotest - Analysis for mold toxins (mycotoxins)

 

In the August 2022 issue of Öko-Test, 21 tomato sauces from (organic) supermarkets, discounters, and drugstores were tested. 

The following test parameters were examined:

·         Mold toxins (mycotoxins)

·         Salt

Mold toxins

Mold toxins were detected in higher amounts in four tomato sauces. Alternaria toxins, specifically alternariol (AOH), and tenuazonic acid (TEA) were identified. In cell studies, AOH damaged genetic material. TEA inhibited the formation of endogenous proteins in animal studies, which could lead to possible organ damage. One of these products exceeds the newly adopted EU guideline value for tenuazonic acid (TEA) by almost twice. There are no legal limits for alternaria toxins. Salt:

The salt content of tomato sauces varies between 0.01 grams and 1.28 grams in 100 grams. Increased amounts of salt were detected in 14 products, which increases the risk of high blood pressure.
