Can spinach and mushrooms be reheated? - In BAV Newsletter 03/2014
The Association for the Promotion of Nutritional Information addresses the reheating of dishes containing spinach or mushrooms on its website. These dishes were previously considered problematic if they were not sufficiently cooled. Due to microbial growth, premature spoilage can occur, or the nitrate contained in spinach can be converted into nitrite, from which nitrosamines, considered carcinogenic, can form in the stomach. However, with rapid and good cooling and proper refrigerated storage, as is the norm today, these dishes can be reheated a second time without any problems.
Link to more information Significant Salt Intake through Bread and Rolls The Chemical and Veterinary Investigation Office Stuttgart found salt levels averaging 1.6% in 70 artisanally made breads and rolls. The range was from 1.0-2.9%. The World Health Organization recommends a maximum intake of 5g of salt per day. Based on usual consumption data, bread and rolls already account for about half of this amount. Spreads and toppings such as sausage or cheese have not yet been taken into account.
