GuidelineforListeriaPrevention-EnvironmentalMonitoring

 

In the "Guideline for Good Practice Recommendations for Preventive Measures against Listeria monocytogenes in Certain Areas of Food Production" by the Food Association Germany, you will find extensive information, assistance, and practical examples on the subject of environmental monitoring for Listeria spp. and/or Listeria monocytogenes.

 

In section 7.1 "Environmental Monitoring for Listeria spp. and/or Listeria monocytogenes" of the guideline, questions such as who is legally obliged to the Listeria environmental monitoring and who is exempt are initially addressed.

The purpose and objectives of Listeria monitoring are also described - primarily to better assess the risk of entry from the production environment, to take early countermeasures, and to enable improved prevention in the food operation overall.

In another section, there are food for thought and assistance for creating a sampling plan for Listeria environmental monitoring, determining sampling sites and frequency, tips for suitable sampling times, and carrying out the sampling itself.

In the last part of the section, sample sampling plans for environmental monitoring in larger production facilities and artisan butcheries are presented in tabular form.
