Information about Escherichia coli (E. coli)
E. coli is a widespread intestinal inhabitant in humans and animals. In raw foods of animal origin, E. coli is regularly found. But this bacterium is also regularly detectable in raw plant foods, as it is capable of surviving in the environment for a long time.
The presence of E. coli in foods is often also assessed as an indicator of a potential health risk due to the fecal origin of these bacteria, since there could be contamination with pathogens of fecal origin at the same time.
Important causes of contaminations
- Hygiene errors in production (e.g. inadequate personal hygiene, microbiologically contaminated work equipment and tools…)
- Cross-contamination between raw and processed foods
- Inadequate slaughter hygiene
- Inadequate hygienic quality of raw materials
