Microbiological Guidelines and Warning Values for Heat-Treated, Ready-to-Eat Foods (BAV-Info No. 03/2012)

The working group "Microbiological Guidelines and Warning Values" of the specialist group "Food Microbiology and Hygiene" of the German Society for Hygiene and Microbiology (DGHM) has been publishing recommendations for the assessment of microbiological test results in food for approximately 25 years.

These recommendations are widely accepted and applied in Germany both by food surveillance authorities and the food industry. Particularly in the assessment of official samples, the DGHM recommendations play an important role.
