New guidelines for mayonnaise and remoulade published

With the publication of the "Guideline for Mayonnaise, Salad Mayonnaise, and Remoulade," the current manufacturer opinions for these products were codified.

The new guideline is a summary of the "Code of Practice Mayonnaise" and the revised "Guiding Principles for Mayonnaise, Salad Mayonnaise, and Remoulade" of the Federal Association of the German Fine Food Industry e.V. (now: Kulinaria Germany e.V.).

The guideline stipulates, in addition to specific evaluation criteria (e.g., at least 50% fat in salad mayonnaise), also guidelines for labeling and presentation.
For instance, indications such as "genuine" and "pure" are uncommon for mayonnaise and remoulade.
