Quantityindicationofthemeatcomponentinreadymeals(QUID)
According to the Food Information Regulation (FIR), the quantity of an ingredient used in the production of a food must be indicated. The quantity of the ingredient is specified as a percentage at the time of its use.
In the determination of the content of meat components in ready meals, food monitoring often finds a significantly lower content compared to the declared amount. If the meat component is precooked, nutrients are lost and are therefore not contained in the ready meal. In these cases, the QUID indication is currently based on the uncooked meat component, not the precooked product. Therefore, the question arises of how the time of use of the meat component is defined.
The time of use of the ingredients refers to the time of manufacture of the ready meal, at which the individual components are assembled into the finished dish. Independently preceding manufacturing processes of individual components are independent of this. The start of preceding manufacturing processes is not the time of use in the manufacture of the ready meal. If, for example, a meat component is precooked before addition, the QUID indication must refer to the amount of the precooked meat component.
