Trainings according to § 4 LMHV

The BAV INSTITUTE also offers hygiene training courses and follow-up instructions according to § 43 Abs. 4 IfSG as well as training according to § 4 LMHV.

These trainings are legally required for all individuals who produce, handle, process, transport, or sell perishable foods, e.g., in retail, and must include the following topics:

  1. Properties and composition of foodstuffs in food businesses
  2. Hygienic requirements for the production and processing of foodstuffs
  3. Food law
  4. Goods control, shelf-life testing, and labeling
  5. Internal controls and traceability in operations
  6. Contingency plan and crisis management
  7. Hygienic handling of foodstuffs in food businesses
  8. Requirements for cooling and storage of foodstuffs in food businesses
  9. Avoidance of adverse effects on food when handling food waste, inedible by-products, and other waste
  10. Cleaning and disinfection

The training lasts approximately 5 hours. A test is conducted, and all participants receive a certificate.
