Update of the DGHM Recommendations
Below we would like to point out the latest updates to the DGHM recommendations. For approximately forty specific product groups of food, the "Permanent Working Group on Microbiological Guidelines and Warning Values for Food of the German Society for Hygiene and Microbiology (DGHM e.V.)" publishes
guidelines and warning values for the assessment of microbiological test results. These criteria are intended to provide assistance in assessing the hygienic-microbiological quality of food. Unlike the legal criteria of the Regulation (EC) No. 2073/2005 on microbiological criteria for food, the DGHM recommendations are not legally binding.
The innovations in the DGHM recommendations were published last month. Accordingly, we have updated the test plans.
The following drafts were published as new recommendations without change:
- Sprouts and seedlings
- Ripened brine cheeses e.g. Feta
- Mozzarella made from cow's milk
- Fruit salads (fresh, ready-to-eat, chopped… fruit and fruit mixtures)
- Raw, dry pasta without filling
The DGHM recommendations are available for a fee at www.dghm-richt-warnwerte.de. We have corresponding access to the data.
New drafts from previous recommendations (values under review):
- Cooked frozen ready meals without raw components
- Sushi
New drafts of new product groups (values in development):
- Frozen fruit
- Frozen vegetables
