Update of the microbiological reference and warning values of the DGHM (as of December 2020)
The DGHM working group “Microbiological Guidelines and Alert Values for Food” adopted new recommendations and drafts for the assessment of microbiological results of food at its last meeting in December 2020.
These DGHM recommendations are published at www.dghm-richt-warnwerte.de, where they can be accessed for a fee. The new drafts are freely accessible at www.dghm.org and can be commented on.
Below is a summary of the last update from December 2020:
- Dried fruits including raisins and fruit powder (draft): New proposed criteria added to the existing parameters are for Bacillus cereus (guideline value: 500 cfu/g and alert value: 1000 cfu/g)
- Raw, seasoned, or marinated beef (draft): Updated recommendation, however, content-wise unchanged compared to the previous recommendation
- Raw, seasoned, or marinated pork (draft): Updated recommendation, however, content-wise unchanged compared to the previous recommendation
- Raw, seasoned, or marinated poultry (draft): Updated recommendation, however, content-wise unchanged compared to the previous recommendation
- Ice cream for loose sale (draft): Updated recommendation, however, content-wise unchanged compared to the previous recommendation
For the following product groups, existing DGHM recommendations are being revised or newly drafted:
- Under revision: Infant food
- New: Buffalo mozzarella
- New: Lamb meat / Lamb minced meat
